Tomato Sauce recipe
- Scald the tomatoes for 2 minutes, drain them, pass them under cold running water, peel them and cut them in small pieces.
- Peel and wash the celery and carrot. Peel the onion and cut it in pieces.
- Place al the vegetables in a blender and mince them.
- Heat the oil in the pressure cooker and sauté the mince for 2 – 3 minutes. Add the tomatoes, season and mix well.
- Close the pot, allow it to pressurize in high heat and, as soon as it begins ringing, reduce the heat and cook for 5 minutes. Turn the heat off, allow steam to escape and open the pot.
- Add the basil and parsley. Process it all with the mixer and continue cooking, with the pot uncovered, for 5 minutes approximately; the sauce must be thick.
- 700 g of ripe tomatoes
- 1 celery stick
- 1 small onion
- 6 basil leaves
- 1 carrot
- 3 tbsp of extra virgin olive oil
- 1 tbsp of minced parsley
- Salt and pepper
