Spicy shrimp recipe
- Peel the shrimp, remove the dark filament in the back, rinse them and let them drain. Place them in a dish, spray them with lemon juice and reserve.
- Scald the tomatoes, drain, put them under cold running water and then peel them and chop them in dices.
- Mince the garlic, onion, thyme and pepper
- Heat the oil in the pressure cooker, add aromatic mince and bay leaf and sauté everything during 3 minutes. Add tomatoes and shrimp. Mix well and salt.
- Close the pot and pressurize it. Reduce fire as soon as the valve begins ringing and cook for 7 minutes. After this time, turn heat off, allow steam to escape and open the pot.
- Thicken sauce at high heat for 2 minutes with the pot uncovered. Remove the bay leaf.
- Place shrimp with the sauce to a dish, sprinkle the parsley and serve immediately.
