Lentils with cotechino recipe


Cotechino is a typical Italian pork beef sausage.
 
  1. Soak the lentils in lukewarm water for 12 hours.
  2. Make an X shaped incision in the tomatoes. Scald them, pass them through running cold water, peel and dice them.
  3. Place drained lentils in the pressure cooker; add peeled onion, grated carrot, tomatoes and herbs. Soak it all with the broth, season with the oil, salt and pepper and mix well. Make sure that the lentils are cooked, since cooking time can be slightly different depending on the legume size. Place cooked lentils in the saucepan.
  4. Prick the cotechino with a needle, place it in the pressure cooker and cover it with a liter of cold water. Close the pot and cook it for 20 minutes from the ringing.
  5. Then drain the cotechino and add it to the lentils. Heat it all together and serve immediately.
-  200 ml of vegetable or beef broth
-  1 cotechino (around 500 g)
-  250 g of lentils
-  1 carrot
-  1 onions
-  500 g of ripe tomatoes
-  4 tbsp of extra virgin olive oil
-  1 tbsp of dry thyme
-  1 tbsp of dry marjoram
