Brown rice with leeks recipe


 

  •  Rinse rice under cold water and drain
  •  Peel and wash leeks keeping only the white part and slicing it not too thinly.
  •  Heat broth in a saucepan.
  •  Heat oil in the pressure cooker and re-soak leeks at medium heat for 3 minutes, stirring frequently; add rice then and sauté for 2 minutes.
  •  Pour hot broth on the rice, scent it all with the thyme and stir.
  •  Close the pot, pressurize it at high heat and as soon as the valve begins ringing, reduce heat at minimum. Calculate 25 minutes and turn heat off, allow steam to escape and open the pot.
  •  Season rice with butter and pepper and, if necessary, rectify salting. Mix it for 2 minutes to get a creamy consistence.
  •  Place rice with leeks to a hot plate and serve.

-       3 tbsp of extra virgin olive oil
